Pesto Tomatoes!

Almost every Friday, Brian and I go shopping for veggies at our local outdoor market.

Once a week, we can find everything cheap: from clothes to makeup, shoes, meats, fruits and vegetables. Fake flowers, real flowers… fresh fish 🐟… and all at a great price. They advertise the food in about 2 pound portions (e.g. 1 kilo). So, 2 pounds of tomatoes costs me about $1.75. Not bad, once you’ve washed everything, cut or picked out the worms!

We really enjoy the freshness of the food here, “zero kilometer” direct from the farmers. So, I decided to make some “fresh” pesto and stuff it in some tomatoes! It was yummy… I don’t believe this is necessarily a Sicilian recipe, but I think that it should be ;). Here’s what you’ll need:

  • 4 medium, round tomatoes 🍅
  • One bunch of fresh basil 🌿
  • About a cup of mozzarella
  • 1/4 cup parmesan cheese
  • Tea spoon of olive oil
  • Salt & pepper

Preheat oven to 375°F

Prep the tomatoes: Wash and cut your tomatoes… cut the center-top off very carefully and scoop out the insides of the tomato. Put a pinch of salt inside each tomato.

For the pesto: pick all the basil leaves 🍃 off, for about two cups worth. Add 1 tsp of olive oil, 1/3 cup of grated parmesan, a pinch of salt, and put into the food processor. Add some pine nuts (to suit your taste), if you want.

Back to the tomatoes: put some shredded mozzarella in the tomatoes (at the bottom), then add the fresh pesto, and top with more cheese! Bake for 20 to 30 min (depending on the tomatoes), until they’re very tender and the cheese well-melted.
